
This started to snowball after I saw J. Kenji Lopez-Alt’s recipe on YouTube. You should follow him if you don’t already. I think the world of his stoicism, his proliferate scientific method, and, of course, his candor about addiction issues in the food industry.
The problem I ran into—not limited to this recipe, is that by the time the ingredients come into season the will to cook has been decimated by the midsummer heat. So, I did this now, with (very good) frozen corn, and three (very good) varieties of regionally procured potatoes. I think my digressions took me in the direction of German potato salad (I used a lot of apple cider vinegar) which suits me fine. I’ll gather my chicken scratch notes and post a recipe in the comments, shortly.
